“MARK THE MONGER’S PRAWN AND MANGO SALAD”

This easy summer recipe is brought to you by Mark the Monger from Ingham Road Seafood.

Peel, devein and chop in half 400g of cooked king or tiger prawns. Cut 2 mangoes and 2 avocadoes into 2cm cubes. Mix the prawns, mango and avocado together in a bowl.

In a separate small bowl add the juice of 2 limes, the zest of 1/2 lime, 1/3 cup of finely chopped coriander leaves, 1 finely chopped red chilli, 1 tablespoon of honey and 1 tablespoon of avocado oil.

Whisk to combine and season well. Pour over the prawn, mango and avocado mixture and toss to combine.

Light and delicious!
